Sabaghina

Wine is the purest expression of the territory. Through its nuances the characters of the soil in which it grows are captured, the paths of yesterday and today are retraced. But it is not correct to think that only the historical cellars know how to tell the story. Sometimes the point of view of a young eye can find aspects to be told that have long been ignored.

The Sabaghina winery, just at the second generation of winemakers, is managed with enthusiasm and character by the Battaini family. A young, unpretentious company, founded on the pride of doing well without overdoing it. The wines they produce are a reflection of their way of being: "easy", light, pleasant from the first sip to the last and with the rare characteristic of telling the territory as it is today. Tradition teaches, but it shouldn’t hold back the development and orientation to a more efficient future.

In 2004 they inaugurated the new winery on the hills of the Oltrepò, west of the Scuropasso stream, with 100 hectares of which 60 of vineland, to justify a wide production, but never lacking from the qualitative point of view. Their vision of the territory is not limited to recognizing the potential of enology: they recently undertook a project with a famous sculptor from Pavia, Marco Lodola, with whom they created a new special label. The goal of their investment? Bring abroad not only quality wine, but also the art of their home!

Wines

Pinot Noir

  • Grape variety: Pinot Noir
  • Appellation: Oltrepò Pavese DOC

Vinification:

the grapes harvested manually are de-stemmed and softly crushed, then placed to ferment in steel at a controlled temperature with selected yeasts. A short period of aging in small oak barrels allows the wine to be complex and structured.


Tasting note:

in the glass it has a ruby red color, characteristic of the blend and the type of aging. On the nose there are intense aromas of red fruits and spices, among which black pepper and cherry stand out. The taste is broad and pleasantly persistent, with a marked acidity and a tannin balanced by the wood.


Aging potential:

medium. Wine not suitable for long aging in bottle.

Pinot Noir Rosé

  • Grape variety: Pinot Noir
  • Appellation: Oltrepò Pavese DOC
  • Color: Rosè
  • Type: Still

  • Harvest: beginning of September
Vinification:

the grapes harvested manually are subjected to de-stemming and soft pressing. A short cryomaceration gives its characteristic pink color and aromatic complexity. After removing the skins, the wine ferments at a controlled temperature in stainless steel tanks, with the help of selected yeasts.


Tasting note:

of a beautiful pinkish color. A wine with an extremely fresh nose, elegant, with a good aroma, which reminds of wild strawberries, rose petals and a light note of tomato leaf. On the palate it remains balanced with a good persistence.


Aging potential:

low. A wine to drink young in order not to lose the freshness of its aromas.

Riesling

  • Harvest: mid-September / end of September
Vinification:

for the vinification of this extremely aromatic variety, which in these limestone lands can express its maximum potential, the only option is trying to preserve the typical characteristics influencing the result as little as possible. After de-stemming and pressing away from oxygen, the must ferments in steel tanks at a controlled temperature with selected yeasts, and then it remains in steel to refine on the fine lees before being bottled.


Tasting note:

light straw-colored, this wine has a fresh and extremely aromatic nose, with strong citrusy and floral notes. The sip is dry and pleasant, with good persistence. A pleasant wine to drink, which on the palate leads back to lemon and orange blossom.


Aging potential:

medium. A wine to drink quite young in order not to lose the freshness of its aromas.
